Description
A great meal when you don't have time to stop and eat. It is protein and nutrient-rich.
Ingredients
- 10 oz organic baby spinach
- 1 cup water
- 1⁄2 cup red beans, no-salt
- 1 cup corn, frozen
- 1 avocado, chopped
- 1 tomato, chopped
- 1⁄2 clv garlic, minced or pressed
- 2 tbsp tahini, raw
- 1⁄2 tsp Bragg Liquid Aminos
- 1 tbsp Dr. Fuhrman's Vegi-Zest or other no-salt seasoning
- 1 tbsp lemon juice
Instructions
Blend spinach with water to liquefy. Add remaining ingredients and blend until smooth and creamy.
Notes
Experiment with adding other vegetables such as cucumbers, bell peppers, chopped celery, or carrots.
