Description

This blended salad is a full meal by itself. Perfect for a quick snack or lunch on-the-go!

Ingredients

  • 1 romaine lettuce, large handful
  • 1 spinach, large handful (may substitute collard greens, kale, bok choy, etc)
  • 1 tomato, chopped
  • 1 sweet red pepper, chopped
  • 1⁄2 avocado, chopped
  • 1 carrot, chopped
  • 5 broccoli florets
  • 1 orange, peeled (may substitute 1/2 pineapple for orange and apple)
  • 1 apple, chopped
  • 1 banana
  • 4 medjool dates, chopped
  • 1 handful walnuts, raw
  • 1⁄2 cup pomegranate juice
  • ice cubes, small handful
  • Water as needed to adjust consistency

Instructions

Add all ingredients to a blender and blend for 1-2 minutes. With a conventional blender, it may be necessary to blend the ingredients in two or three batches and then mix together in a pitcher.

Notes

You can substitute 1/2 pineapple for the orange and apple.
