Description

A delicious pureed soup with hints of nutmeg and clove. Perfect for a fall or winter evening meal.

Ingredients

  • 6 cup water
  • 1 cn low sodium vegetable broth
  • 2 cup soy milk
  • 2 onions, chopped
  • 6 carrots, chopped
  • 5 celery stalks, coarsely chopped
  • 2 medium zucchini, coarsely chopped
  • 2 whole butternut squash, peeled, seeded, and cubed
  • 3 tbsp Dr. Fuhrman's Vegi-Zest or other no-salt seasoning
  • 1 tsp Spike or Mrs Dash seasoning, no-salt
  • 1⁄2 tsp ground cloves
  • 1 tsp nutmeg
  • 1⁄2 to 1 lb fresh mushrooms, small size, cut in half
  • 2 tsp ground cinnamon

Instructions

Place everything in soup pot except mushrooms. Boil and then simmer for 1/2 hour. Blend everything. Add mushrooms. Cook another 1/2 hour.
