Description

These cookies make a great anywhere, anytime snack. Perfect for lunch box treats on school and work days, or as a snack while hiking or bicycling.

Ingredients

  • 1⁄4 cup walnuts, chopped
  • 1⁄2 cup medjool dates, chopped
  • 3 large bananas, mashed
  • 1⁄2 cup unsweetened applesauce
  • 2 cup quick oats (not instant)
  • 1⁄2 cup shredded coconut

Instructions

Preheat oven to 350 degrees. Mix ingredients together in a large bowl. Press dough in a 9" X 9" baking pan or form into cookies. Bake for 30 minutes. Cool on wire rack. When cool, slice into squares or bars and serve. ENJOY!!

Notes

You may substitute raisins for chopped medjool dates. For moister cookies, use 1 cup of unsweetened applesauce.
